Protein-Packed French Toast!


If you love French toast but want a high-protein, low-carb version that fits your goals, this recipe is for you! Using Maria Emmerich’s famous PSMF bread (check out my reels for the bread recipe!), plus egg whites and one whole egg, this French toast is fluffy, satisfying, and perfect for breakfast, brunch, or even dessert.

Not only is it delicious, but it’s also packed with lean protein to help you hit your goals for fat loss, body recomposition, or muscle maintenance. Let’s dive in!

🥣 Ingredients (1 Serving)

  • 1 loaf PSMF bread (recipe by Maria Emmerich – see my reel on IG for this recipe here!)
  • 150 ml liquid egg whites (~5 egg whites)
  • 1 whole egg
  • 1 tsp vanilla extract (optional)
  • ½ tsp cinnamon (optional)
  • Pinch of sea salt
  • coconut oil spray 

👩🍳 Instructions

  1. Slice your loaf of PSMF bread into thick slices (about 6–8 pieces depending on the loaf size).
  2. In a shallow bowl, whisk together the egg whites, whole egg, vanilla, cinnamon, and pinch of salt until fully combined.
  3. Dip each slice of bread into the egg mixture, coating both sides.
  4. Heat a nonstick skillet or griddle over medium heat and lightly spray with coconut oil spray.
  5. Cook the slices for 2–3 minutes per side, until golden brown and slightly crisp on the outside.
  6. Serve warm with your favorite toppings!

🍓 Topping Ideas

  • Sugar-free syrup
  • Fresh berries (blueberries, strawberries, raspberries)
  • Dollop of fat-free Greek yogurt
  • Sprinkle of cinnamon or cocoa powder

⚡️ Macros (per serving, without toppings)

Approximate for full loaf of PSMF bread + 150 ml egg whites + 1 whole egg:

  • Calories: ~320
  • Protein: ~55 g
  • Carbs: ~2 g
  • Fat: ~6 g

This protein French toast is an absolute game changer — fluffy, sweet, and satisfying, without the carb crash. It’s one of my favorite ways to use PSMF bread and makes the perfect high-protein breakfast (or treat!).
