🍪 High Protein Chocolate Chunk Cookie Dough (Sugar & Gluten Free)


This isn’t your average cookie dough — it’s a protein-packed, low-fat, and customizable version that fits perfectly into a high-protein, muscle building training day. I like to eat it on my re-feed days while I am following some PSMF days. It is also gluten and sugar free!

This high-protein cookie dough is thick, chocolatey, and satisfying — but made with cottage cheese, Greek yogurt, whey protein, and coconut flour instead of butter and sugar. It’s a full 1.1 kg batch you can portion into 10 servings, each like a protein bar: ~200 calories, 21 g protein, and still low in carbs compared to traditional cookie dough

✨ Ingredients (Makes ~10 servings, ~114–115 g each)

  • 225 g low-fat cottage cheese (about 1 cup)
  • 450 g 0% Greek yogurt
  • 1 large egg (~50 g) → for safety, use pasteurized eggs if consuming raw or not baking
  • 100 g coconut flour
  • 150 g whey protein isolate (vanilla; 5 scoops @ 30 g)
  • 4 tbsp (≈48 g) erythritol (granular)
  • 1 tsp (≈5 g) stevia glycerite (or liquid stevia drops, to taste)
  • 10 g vanilla extract
  • 100 g sugar-free chocolate chips or 1 sugar-free chocolate bar, pulsed into chunks
  • 1 tsp (≈4 g) baking powder
  • ½ tsp (≈3 g) fine salt (don’t skip — essential for cookie dough flavor)

👩🍳 Instructions

  1. Blend the dairy: In a blender, blitz cottage cheese and Greek yogurt until completely smooth.
  2. Mix the dry ingredients: In a large mixing bowl, whisk whey protein, coconut flour, erythritol, baking powder, and salt.
  3. Combine: Add the blended cottage cheese mix, egg, and vanilla extract to the dry ingredients. Stir until a thick cookie dough forms.
    • If too thick: add 1–2 tbsp water or almond milk.
    • If too thin: add a little more coconut flour.
  4. Fold in the chocolate chunks.
  5. Chill in the fridge for 2-3 hours or overnight (ideal) for the best texture.
  6. Divide into 10 portions (~114 g each).
