🥣 Ingredients (1 Serving = 8 Bites)
- 250 ml liquid egg whites (~8 egg whites)
- 1 whole egg
- 180 g low-fat cottage cheese (≈2 g fat/100 g)
- 100 g red bell pepper, finely diced
- 20 g baby spinach, chopped
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp smoked paprika (optional)
- Salt & black pepper, to taste
👩🍳 Instructions
- Preheat oven to 180°C / 350°F. Line a muffin tin with 8 silicone cups or spray lightly with coconut oil spray.
- Blend base – In a blender, combine egg whites, whole egg, cottage cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until smooth.
- Add veggies – Stir in red pepper and spinach.
- Fill muffin cups – Divide evenly into 8 cups.
- Bake for 22–29 minutes, until the tops are set and a toothpick comes out clean.
- Cool & enjoy – Delicious warm, or store in the fridge for up to 4 days (they also freeze well).
