  • 250 ml liquid egg whites (~8 egg whites)
  • 1 whole egg
  • 180 g low-fat cottage cheese (β‰ˆ2 g fat/100 g)
  • 100 g red bell pepper, finely diced
  • 20 g baby spinach, chopped
  • ΒΌ tsp garlic powder
  • ΒΌ tsp onion powder
  • ΒΌ tsp smoked paprika (optional)
  • Salt & black pepper, to taste

  1. Preheat oven to 180Β°C / 350Β°F. Line a muffin tin with 8 silicone cups or spray lightly with coconut oil spray.
  2. Blend base – In a blender, combine egg whites, whole egg, cottage cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until smooth.
  3. Add veggies – Stir in red pepper and spinach.
  4. Fill muffin cups – Divide evenly into 8 cups.
  5. Bake for 22–29 minutes, until the tops are set and a toothpick comes out clean.
