Make your very own delicious "savory keto ice cream" with this bacon chicken liver pâté at home in 10 minutes using just a few ingredients. Serve with pork rinds (I love this one) or sliced cucumbers.
I order the chicken livers online with my grocery delivery and it makes it easy to search for and find!
Yield: Makes 4 Servings
Ingredients
- 1/2 lbs organic chicken livers (or turkey livers)
- 6 slices of sugar free bacon (I like this one or this one) - 6 cooked slices should be about 66 grams
- 4 tablespoons melted grassfed butter or ghee (or bacon fat) (I like this ghee)
- 2 cloves of garlic
-1/2 tsp onion powder
-1/2 teaspoon sea salt
-ground pepper
-1/2 cup of water or beef bone broth
-optional: herbs or flavorings of your choice - bay leaf, sage, rosemary, caraway seeds, etc
Directions
Pan fry the bacon to desired doneness and remove from the skillet. Fry the drained chicken livers in the bacon fat on medium heat until browned.
Add in garlic cloves, onion powder, sea salt, pepper and any fresh herbs of your choice to the pan and cook for 1-2 minutes.
Add in 1/2 cup of water or beef bone broth. Bone broth will give it a richer, deeper flavor but not necessary with the bacon.
Turn down heat to a simmer. Once cooked through for about 10 minutes in the simmering water until about half the liquid is evaporated and the livers are cooked through.
Transfer to a food processor and add the remaining 4 tablespoons of melted butter or ghee. Add the bacon.
Blend until smooth. Put into mason jars and refrigerate for 1 hour in the freezer for same day or overnight in the fridge.
Serve with pork rinds or 1/2 cucumber sliced into crackers.
Macros per serving about 5.3 oz (pate only):
Protein: 13.5 g, Fat: 17 g, Total Carb: 1 g.
