📝 Ingredients:

  • 4 tbsp unsweetened cocoa powder
  • 2 scoops whey protein isolate (chocolate or vanilla, ~60g total)
  • ½ cup almond flour (75g)
  • 2 tbsp coconut flour
  • 360g fat-free cottage cheese
  • 2 tbsp powdered peanut butter (e.g., PB2)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • Âź cup unsweetened almond milk (add slowly as needed)
  • 1 tsp stevia glycerite or monk fruit/stevia to taste

🥣 Instructions:

  1. Preheat oven to 350°F / 175°C. Line an 8×8” or similar-sized baking dish with parchment paper.
  2. In a large mixing bowl, whisk together cocoa powder, protein powder, almond flour, coconut flour, baking powder, and salt.
  3. In a blender or food processor, blend the cottage cheese, eggs, vanilla, syrup, powdered peanut butter, stevia, and almond milk until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well combined. The batter will be thick but spreadable—add a splash more almond milk if needed.
  5. Transfer the batter to the prepared baking dish and smooth the top with a spatula. If you have a mold for homemade bars this is great as you don’t have to slice them later 😍
  6. Bake for 15–18 minutes, or until the center is just set and a toothpick comes out mostly clean.
  7. Cool completely, then slice into 10 bars. Store in the fridge for up to 1 week or freeze for longer shelf life.
