Ingredients
2 tablespoons, 1 oz. or 30 ml | cold butter or butter flavored coconut oil1/3 cup plus 1 tablespoon, 1.27 oz. or 49 g | almond flour
1⁄2 teaspoon, 0.08 oz. or 2.5 ml | pure vanilla extract
Directions
1. Preheat oven to 325F or 160C.
2. In a bowl, knead the coconut oil with the powdered stevia, almond flour, vanilla, liquid stevia and sea salt until smooth. Refrigerate until firm, about 1 hour. You can also shape into a log, wrap in plastic wrap and refrigerate for an easy slice and bake cookie.
3. Roll out the dough to 1⁄4-inch thickness and cut into desired shapes. If you went the log route, slice into 1⁄4-inch thick rounds. You should get 5 cookies approximately.
4. Place on a parchment-lined baking sheet and bake until golden on the bottom, about 13 minutes. Remove and cool completely before serving.
The recipe is for two servings but can be doubled for multiple servings!
