Creamy Garlic Kale Salad Dressing


This prebiotic rich, tangy, and flavorful dressing is perfect for massaging into kale or drizzling over your favorite greens. It is packed with umami flavor and just the right touch of creaminess to elevate your salads while supporting optimal gut health! 

Ingredients

3/4 cup non-fat Greek yogurt

1/4 cup nutritional yeast

2 tablespoons yellow mustard or Dijon mustard

2 tablespoons tamari or gluten-free soy sauce

2 tablespoons tahini

2 tablespoons apple cider vinegar or fresh lemon juice

1/2 teaspoon garlic powder OR 2 cloves garlic, minced (if you prefer a stronger garlic flavor)

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon hot sauce (optional, for a spicy kick)

A few drops of liquid stevia glycerite, to taste (optional, for a touch of sweetness)

Instructions

1. In a medium bowl, combine the Greek yogurt, nutritional yeast, mustard, tamari, and tahini. Whisk until smooth.

2. Add the apple cider vinegar (or lemon juice), garlic powder or minced garlic, onion powder, salt, and hot sauce. Mix well to combine.

3. Taste the dressing and adjust the seasoning. If you would like a slightly sweeter profile, add a few drops of liquid stevia glycerite.

4. Use immediately or transfer to an airtight container and refrigerate for up to 5 days.

How to Use

For kale salads: Massage this dressing into chopped kale leaves to soften them and enhance their flavor.

As a dip: Serve alongside fresh veggies or roasted potatoes.
