Easy [1 Minute] Cinnamon Muffin OR Walnut Muffin

This recipe is ideal for the oven, but can also be made for an instant dessert or snack with a microwave. For the lowest amount of carb, use only liquid stevia and omit the swerve or erythritol. Bitterness and sensitivity to it varies quite a bit among people. For some, 4-5 drops of liquid stevia will do. I like 1/2 teaspoon to sweeten it and the sea salt generates a nice balance of flavors. To make it in the oven, double or triple the recipe to make 2 or 3 portions of about 2 muffins each. I have 1/4 teaspoon cinnamon in the recipe but I like to use 1/2 a teaspoon per muffin as I LOVE cinnamon and it is wonderful for lowering blood sugar!

Yield: 1 Serving

Prep time: 4-5 minutes

Cooking time: 1 minute (or 25-30 mins in the oven method)

Ingredients

2 tablespoons flax meal 
1 tablespoon coconut flour 
1 teaspoon Swerve "confectioner's"
1/4-1/2 teaspoon ceylon cinnamon (or regular cinnamon)
1/8 teaspoon baking powder 
1 organic egg 
1 tablespoon coconut oil or butter flavored coconut oil (melted) 
*sub walnut oil for coconut oil if making the walnut muffin!
1/4 cup filtered water
1/2 teaspoon stevia glycerite (or more depending on your taste) 
Pinch of sea salt
1 tablespoon butter or butter flavored coconut oil, solid

*optional (or erythritol, granulated Stevia, inulin or monk fruit blended in a food processor for 30 seconds)

Directions

1. Pre-Heat the oven to 350 F or 170 C and coat a muffin pan with coconut oil if using the oven method.

2. Combine the dry ingredients in a small bowl with a fork. Using a wooden spoon, add the egg, melted coconut oil, liquid stevia and pinch of sea salt to the mixture. This will form a thick batter. Add the water and use a whisk to combine into a thick but moist batter.

3. Bake in the oven for 25-30 minutes until nicely browned if using the oven method.

4. For the microwave method, spray a microwave safe ramekin or mug with coconut oil and add the batter. Put in the microwave on high for about one minute and enjoy! Some microwaves might require 1-2 minutes to cook the muffin.

Serve it with 1 tablespoon of coconut oil.
