New Protein Pizza with the Viral Cottage Cheese Flatbread!

I triedĀ the viral protein flatbread and it was delicious! Today my 3 year old son Luca asked for pizza šŸ• for dinner so I decided to try making a pizza crust with the cottage cheese flatbread! It actually turned out delicious!

I added gelatin to the original vital flatbread, and I sprayed the parchment paper with coconut oil. The pizza crust came out pretty firm,Ā but then it softened when I baked it again with the pizza toppings at 200 C so it turned out firmĀ like a pizza crust but still soft enough to feel like the texture of a pizza crust!Ā 

The macros for the pizza crustĀ are 35 g of protein, 17 g of fat, and 8Ā g carb.

What you need - The Ingredients:Ā 

1 Cup light cottage cheese (2%) (350 g or 12.5 oz by scale weight)

2 eggs

2 tablespoons gelatinĀ 

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp oregano

saltĀ to tasteĀ 

coconut oil spray (or sub)

parchment paperĀ 

What To Do- Directions:

Pre-heat the oven to 375 F or 190 C. AddĀ together the cottage cheese, eggs, gelatin and spices in a blender or food processor.

Pour the mixture into a baking pan with parchment paper sprayed with coconut oil. I used a cake pan to make a circular shape. Nothing wrong with square or rectangle pizza either! Pick up theĀ pan and balance it out to spread it into the corners.

Place it in the oven at 375 F or 190 C for 35 minutes.

Let it cool outside of the oven, then gently peel off the parchment paper.

I topped mine with some tomato sauce, mozzarella, ham, mushrooms and olives! It turns out amazing and Luca was very pleased šŸ„°šŸ•
